The David Rumsey Cartographical Collection: over 10,000 historical maps online, along with various viewing tools.

I really enjoyed the collection of Japanese maps from the East Asian Library at UCB.

It's a wonderful service - and the superb Java GIS browser that mixes historical and modern information is a wonderful tool.
